The winter blues are in full effect over here. As cold weather and short days drag on and summer becomes more of a dream, I’m left reminiscing about warm nights spent at my grandparents’ home in Montana making s’mores around the campfire. But with cold weather and a busy schedule right now, I needed a way to bring the outdoors in. Samantha Seneviratne’s on showed me that while there is no way to speed up the calendar, there is a way to bring one of the best parts of summer right to your table.
Inspired by an episode of Girl Scout Cookie Championship, these brownies capture all the elements of s’mores in every bite—no campfire required. Mimicking the classic s’more, Samantha puts chopped salted pretzels and caramel-laced Samoa cookies in the batter to give the dessert the crunchy texture that graham crackers traditionally deliver. As for the chocolate, there’s both cocoa powder and chocolate chips, so the brownies turn out really rich. And would they even be s’mores without marshmallows? These campfire treats are topped with mini marshmallows, which are broiled to turn them gooey and a beautiful golden-brown color.
